Weekly Menu #1

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s a family recipe and I don’t have it published yet!

Sunday: Ham & Cheese Pockets
These area always a huge hit in our house. We change up the filling frequently but we made a full ham last week so we’ve got some to use up. 

Monday: Waffles of Insane Greatness
We are big believers in Brinner (breakfast for dinner) here so it’s not uncommon to find it on the menu at least once or twice a month. These waffles are awesome. Nice and crisp on the outside while fluffy on the inside. We use the Cuisinart 5-in-1 Griddler with the waffle plates. I don’t think I’ve ever had a waffle stick while using these!

Tuesday: Slow Cooker Cheesy Chicken Tater Tot Casserole
Such an easy meal! I love that the chicken gets tossed in while still raw and that there is no “cream of whatever” soup in it either – just milk! The chicken cooks up super tender and moist and its especially tasty served in a tortilla as a burrito for leftovers!

Wednesday: Chicken Taquitos
I swear I could eat this filling all on its own! And the entire batch by myself at that. I throw in black beans and frozen corn as well to help stretch the filling even further for our family. Serve with some salsa, guac, and sour cream for a great meal.

Friday: Homemade Pizza
This is our family tradition ever week. Everyone gets to create their own pizza then we eat in the living room and watch a movie. The kids look forward to this treat every Friday night!

Saturday: Sloppy Joes
I have lots of “wing it” meals. I don’t have a recipe, I just throw stuff together. Sloppy joes tend to be one of these. Hamburger + tomato sauce + seasonings/spices = yum. I like to make pretzel buns for these but using tortillas for “sloppy joses” as Micah calls them is delicious too!

    1. I’ll share it with you here but I’ll also definitely make a post about it. I got it from Micah’s mom and it’s so simple! I’m sure it’s out there somewhere but it’s one she’s been using for years.

      Pizza Crust
      3 – 3 1/2 cups flour (I start with 3 then add more if needed)
      1 tsp salt
      1 /2 tsp sugar
      1 TBSP active dry yeast
      8oz warm water (sometimes I use up to 10oz)
      1 TBSP oil

      I mix the dry ingredients in the stand mixer then add the water and oil until it forms a nice smooth ball. As it mixes I’ll add more flour or water as needed. Let rise for 1-2hours on the counter or overnight in the fridge. It makes 2 large pizzas. My favorite way to bake the two larges is to stick the made pizzas into a cold over and turn it on to 500*. It takes about 15-20 minutes for the pizzas to be finished depending on the amount of toppings.
