Weekly Menu Plan #34

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Sunday: BLACTs – Bacon, Lettuce, Avocado, Cheese, & Tomato sandwiches. Who needs a normal BLT when you can add avocado and cheese for an even better sandwich?! 

Monday: Bean & Cheese Taquitos – I’ve still got a few containers of refried beans left in the freezer so this is going to be an extremely easy and frugal meal – two favorites in my book! I’m going to serve these with sides of guac, salsa, and tortilla chips. 

Tuesday: Ham & Potato Cheese Soup – I like throwing in diced ham to my potato cheese soup to add a little extra somethin-somethin. I’m also considering making some bread bowls because what screams fall more than cheesy and creamy soup stuffed in a bowl made of bread?

Wednesday: Leftovers – We are moving leftovers to Wednesday this week because tomorrow is an extra special day!

Thursday: Pretzel Dogs, French Fries, & Green Beans – It’s Parker’s 8th Birthday!! I’m still in a bit of denial that I’m the mom of an 8 year old. My oldest kid is quickly closing in on a decade! Holy buckets! He requested these fantastic pretzel dogs made with little smokies. Yum! He also asked for our favorite green beans from Sam’s Club. And I’m not sure where this kid came from but he wants chocolate cake for dessert. Who eats chocolate when you can have funfetti?

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Cheesy Tortilla Soup & Baked Southwestern Egg RollsThis is such an easy dump soup if you use the cans and it’s really not any more difficult to make homemade versions of the canned items. The egg rolls are AMAZING and pair super well with the soup. They work well for dipping in it or just eating along side. If you make mini versions using wonton wrappers it will make a lot and you can freeze them unbaked for a later date.
