Weekly Menu Plan #37

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Sunday: Chili – I had a friend looking for chili recipes this week and I immediately added it to the menu. It’s ready and waiting in the slow cooker for us to dig in!

Monday: BBQ Pork Quesadillas – I needed a quick meal so we can be ready to head out the door for Trick-or-Treating! The pork is already cooked – it’s the last bag of what we had in the freezer from earlier in the summer. I’ll pair these with fresh veggies for dipping.

Tuesday: Breakfast Pizza – Homemade enchilada sauce on pizza crust topped with scrambled eggs, crumbled sausage, black beans, corn, and cheese. We like to top ours with sour cream, avocado, and salsa. 

Wednesday: Chili over Corn Bread WafflesI always make a HUGE batch of chili and then find other ways to use it up during the week. Corn bread is a perfect accompaniment to chili and making it waffle style is fun for the kids. Just pour the chili right over the top and add extras like cheese and sour cream. It can be eaten with a fork or spoon! 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Pork Carnitas Burritos – Pork shoulders were on sale for $0.98 at a local grocery store this week so I HAD to add this to the menu. We’ve tried making it with other cuts of pork and it’s never as good. I’m so excited for days of eating this amazing meat!
