Weekly Menu Plan #39

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients. 

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, Breakfast Burritos, and various types of muffins. 

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese. 

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Salad Bar – It’s been forever since we’ve had a huge salad bar and it sounded so good! I’ve got lots of different fixings and I’m even making homemade croutons. I’ll probably make some yummy bread to go along with this. Wouldn’t want to keep things too healthy 😉

Monday: Brown Sugar Ham Grilled Cheese – These have become a new favorite in this house. Each time I ask for menu suggestions these are one of the first meals out of Jamison’s mouth. I can’t make them every week but I definitely try and get them on the menu at least once each month. 

Tuesday: Taquitos – I haven’t decided what type of taquito to make yet. I’ve got the ingredients for the slow cooker creamy chicken taquitos as well as refried bean and cheese taquitos. We also froze a lot of the pork carnitas we made last weekend and that would make excellent filling as well. So many choices! I guess I’ll decide on Monday so I can get what I need thawed. 

Wednesday: Honey Mustard Chicken and Rice – Shredded chicken mixed with mayo, spicy brown mustard, honey, and cream of chicken soup then served over brown rice. It’s creamy and delicious! It also cooks in a slow cooker which is always a bonus. 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Mongolian Beef Ramen – This will be a new recipe for us but Micah and I are big fans of P.F. Chang’s Mongolian Beef so I imagine this will be a hit. Maybe I should start posting recipe reviews so I can let you all know if it’s worth trying/too much work/a huge winner/etc. What do you think?
