I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.
If you need some inspiration for how to create menu plans you can read here where I go into detail about how I make a plan for our food week and here to read how I create our grocery list.
I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: Buffalo Chicken Cupcakes- It’s been a few weeks or so since anything Buffalo Chicken made it’s way onto our meal plan so it seemed natural to stick it on this week.
Monday: Pizza Sliders – Such an easy weekday meal! Throw some pizza toppings inside of dinner rolls, brush the tops with a garlic butter mix, then bake until melted. Dipping these in our homemade pizza sauce will just make them even better.
Tuesday: Sticky Sesame Chicken – Sesame chicken is one of my absolute favorite dishes at a Chinese buffet and this recipe is amazing – plus I know what is in it! I plan on serving this with a side of homemade fried rice.
Wednesday: Cheeseburger Flatbreads – It’s been years since I’ve made these but when I scrolled through and saw them on Pinterest I knew they needed to be made again. I use homemade dinner rolls to make the flatbread and leave out the onion from the meat mixture. Hopefully they are still a hit with the kids!
Thursday: Leftovers
Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.
Saturday: Cuban Taco Boats – Micah loves Cuban sandwiches and we’ve had fun trying new ways of making them. We really enjoy the Cuban egg rolls at the Cheesecake Factory and we’ve made our own Cubans as well. This is a little twist on the sandwich served in a tortilla boat and baked in the oven until hot and bubbly.
What’s on your menu this week? Are you still eating Thanksgiving leftovers?
