Weekly Menu Plan #43

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Beef Stroganoff – We prepped a couple bags of this several weeks ago and stuck them in the freezer. It’s all the ingredients minus the sour cream mixture that gets added at the end and the noodles. I stick it in the slow cooker while still frozen and let it cook until about an hour before meal time. So handy! 

Monday: Chicken & Dumplings – This is such a perfect meal for cold weather and it’s also really frugal. Occasionally I’ll throw in some diced carrots or celery to bulk it up. 

Tuesday: Chicken & Bacon Quesadillas – I’m all about easy meals right now as we get closer to Christmas. Shredded chicken, bacon crumbles, and cheddar cheese in between tortillas totally falls into the category of easy – especially if I have chicken cooked and ready ahead of time!

Wednesday: Buffalo Chicken Taquitos – We didn’t get to enjoy the buffalo chicken on the menu a few weeks ago (I’m thankful for a stocked pantry so I can throw together other meals when needed!) so I put these on this week instead. 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Honey Crunch Pork Chops – After a week filled with chicken I knew I needed to use a different kind of protein. We’ve got several chunks of a pork loin in the freezer that we buy from Sam’s Club to slice into chops. I think these are best served with mashed potatoes and steamed green beans. Both go great with the honey garlic sauce!
