Weekly Menu Plan #45

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Merry Christmas! You can read our full menu plan for Christmas dinner here. I’m already drooling!

Monday: Rotisserie Chicken & sides – Micah’s parents will be joining us so we are grabbing some of the awesome $5 cooked chickens from Sam’s Club. So easy for a quality meal. 

Tuesday: Sticky Chicken Wraps – It’s been a while since we’ve had these and after all the richness of the holiday food we needed something fresher and easy to make. If we have any rotisserie chicken left we will use that shredded up otherwise we have chicken in the freezer we can cook. Simple, simple, simple!

Wednesday: Grilled Cheese & Chili – Like I said, simple, simple, simple this week! We froze some chili left from last week so now we can throw it in the crock pot for a fast dinner this week. 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Happy New Year’s Eve! We will be doing another appetizer buffet with some of the same as we had on Christmas eve (whatever didn’t get cooked) and a few new ones that I’ve already got prepped and ready – pretzel dogs and Asian meatballs!
