Weekly Menu #3

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s a family recipe and I don’t have it published yet!

Sunday: Pulled Pork Sandwiches
Our church has a ministry called the Holy Smokers that make amazing smoked meats for different events. A few times a year the church puts on a free meal, usually consisting of pulled pork and hot dogs, plus sides and after they offer any leftover meat for sale as a fundraiser. This meat is always amazing so we try to buy several bags to throw in the freezer for future meals. We almost always have these on pretzel buns because it’s the perfect match for smokey bbq pork. 

Monday: Bean & Cheese Burritos
I use this recipe and make a huge batch of refried beans for these burritos. I like to divide the remaining beans into small freezer containers for future meals. I load up tortillas with the beans, cheddar cheese, and some brown rice for a very frugal but delicious meal!

Tuesday: BBQ Pulled Pork Pizza
Using the leftover pork from Sunday I love making this spin on BBQ chicken pizza. Same concept (pizza dough, bbq sauce, pork, cheese) just a smokier flavor. Sometimes I’ll mix ranch and bbq sauce together for the kids’ pizza so it’s not so intense and spicy but several don’t mind the straight bbq pizza. 

Wednesday: Stir Fry
This is one of those taste and see meals. It’s never exactly the same and there is no way I could replicate it for anyone else. I start out with a pound of cooked spaghetti noodles and put it in a wok with heated chicken or beef broth. Then I start experimenting. A little soy sauce, some hoisin, garlic powder, onion powder, chili powder, ground ginger, honey, brown sugar, peanut butter… the list goes on. I just add here and there until it tastes rich and flavorful. I’m not sure it’s ever been exactly the same. It’s always a hit though and another great “eat from the pantry” meal. 

Thursday: Leftovers

Friday: Homemade Pizza

Saturday: Double Crunch Pork Chops
Man oh man these are good! Crispy and sticky and super juicy. We love serving these with mashed potatoes for the extra sauce and some steamed green beans. Yum!
