I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.
Sunday: Bean & Cheese Burritos – I love making these burritos because they are a pretty frugal meal plus they taste awesome! The difference is definitely because of making homemade refried beans. So much flavor!
Monday: Lo Mein – I know this was on the menu last week but because of being sick we didn’t get a chance to do all our grocery shopping. The lo mein noodles happened to be an item that got skipped. I made Pulled Honey Sesame Chicken and Fried Rice instead so Lo Mein got moved to this week.
Tuesday: BBQ Chicken Pretzel Bombs – This is a “my own creation” meal that I came up with many moons ago. There are probably similar recipes out there but none that I use. Well, I use the recipe for pretzel buns but then instead of forming buns right away i pull off some dough, put BBQ chicken, cheese, and pineapple (only in some) and then fold the dough around the fillings. Once they are all filled I dunk them in the baking soda bath and top with salt then bake. The insides get all gooey and taste amazing! These don’t last long in this house.
Wednesday: Egg Melts – If you’ve never made Pioneer Woman’s Egg Melts you need to get on that! It’s like an egg salad sandwich only with some cheese mixed in and then broiled on top of English Muffins. We make ours with sausage instead of bacon and occasionally add in mushrooms or avocado as well. I’m ready for these now!
Thursday: Leftovers
Friday: Homemade Pizza & Movie Night – Micah’s parents are visiting for the weekend so we are going to do a make your own mini pizza night! I’m going to get crusts ready this week so everyone can assemble the pizza of their dreams.
Saturday: Brats, Potato Salad, & Chips – I really hope the weather is decent for grilling! I’ll also try and get this potato salad recipe posted. It’s my grandpa’s recipe and the only potato salad Micah really loves.
