Weekly Menu Plan #16

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Sunday: Crock Pot Ham with Mashed Potatoes – Some friends and I were discussing ways to use up leftover ham and after the amazing suggestions I knew I just had to have ham on the menu. I can’t wait for all the ham leftovers!

Monday: Chef Salad – With the temps rising I want to make sure I’m making some meals easy on the air conditioner. It works overtime when I’m cooking! 

Tuesday: Black Bean and Rice Enchiladas – I haven’t made these in quite a while but I just made a huge batch of black beans for the freezer so it only makes sense to add enchiladas to the menu! I love making homemade enchilada sauce as well because it’s so easy and incredibly cheap. 

Wednesday: Eggs Benedict Casserole – Yay for ham leftovers! I’m actually planning on using ham for breakfast meals this week too (ham gravy & biscuits, anyone?) but we love this casserole and it makes a great dinner. Plus I haven’t learned how to poach an egg yet (one of those silly cooking skills that still intimidates me for some strange reason) so this is an easy way to get the flavors of eggs benedict without needing to learn that skill or stand at the stove poaching a gazillion eggs. 

Thursday: Leftovers

Friday: Homemade Pizza & Movie

Saturday: Sticky Finger Chicken Wraps – One of our favorites! If you’ve been around for any time at all you know we eat this about once a month. The jar of sticky sauce has been staring at me from the fridge so I’m answering it’s call to be consumed!
