Weekly Menu Plan #22

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Sunday: Sloppy Joes & corn on the cob – We have yet to buy corn this season and knowing how much the kids LOVE it this just felt wrong. I’m looking forward to this summery meal with watermelon on the side!

Monday: Honey Mustard Chicken with rice – This is one of those meals that I’ve thought about posting the recipe for because we LOVE it but it’s not the prettiest meal to photograph. It’s basically beige with more beige. Diced chicken is mixed with honey, brown mustard, cream of chicken soup (I use this recipe) and some mayo to create a super creamy sauce. We pour it over brown rice and usually serve it with broccoli. I’m out of broccoli so side salad or steamed green beans it is!

Tuesday: Brown Sugar Chicken Sandwiches – I was going to make Brown Sugar Ham Sandwiches but there was a demo of Hillshire Farm Chicken at Sam’s and we really liked it. It was a better deal than the ham as well so we swapped it out and are going to try it instead! 

Wednesday: Chicken Ranch Tacos – Would it be a normal week if we didn’t have a taco/burrito/enchilada/taquito style item on the menu? Probably not. The ranch seasoning adds a little something extra to the normal taco flavor that is something special. I love making our own ranch seasoning mix (cheaper and healthier!) instead of buying the little packets and I’ll be sharing our favorite homemade taco seasoning this week as well so you can make this meal with us!

Thursday: Leftovers

Friday: Out with family for my parents 35th wedding anniversary! It’s been a while since my family was all together so this will be a fun night!

Saturday: Grilling! I’m not sure what yet but we will be with family so I’m sure there will be plenty going on. If you need some ideas to go with your summer grill plans you can visit this post where I share ten easy summer sides to throw together for your summer gatherings!
