I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.
Sunday: Pulled Pork sandwiches – It’s a cook out with extended family. A good portion of my side of the family hasn’t seen us in about a year! That means the last time they saw the little guys they were barely crawling let alone running around the yard. We are going picnic crazy with pasta salad, potato salad, fruit, and cupcakes. Yum!
Monday: Honey Chipotle Chicken Crispers (Chili’s Copycat Recipe) – We used the recipe for these chicken crispers a few weeks ago when we made Sticky Fingers Wraps. The breading is light and crispy while the chicken stays incredibly juicy.
Tuesday: Burgers – I’m thinking of doing some gourmet style burgers topped with grilled pineapple or fried eggs.
Wednesday: Pizza Quesadillas – We like to call these “Pizzadillas.” These are a huge hit with the kids and they are perfect for letting them help in the kitchen. Sprinkle on a light layer of cheese on the tortilla, add your toppings, another sprinkle of cheese, and a second tortilla. Grill each side until toasted and the cheese is gooey. Serve it with a side of warm pizza sauce!

Saturday: Cuban Sandwiches – Micah discovered he LOVES Cubans a year or so ago and it’s almost always what he orders when we go out. I realized that we have amazing pulled pork left from the Father’s Day meal at our church so we are going to make our own Cubans at home!
