Weekly Menu Plan #24

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Due to being out of town last week we did our grocery shopping extra early. This also means that other than a few fresh ingredients I haven’t gone grocery shopping in almost a week. We will be eating from the pantry and freezer this week so hopefully I’m able to pull together some good meals!

Sunday: Lo Mein – We’ve got some veggies to use up so I’m throwing together a stir fry of zucchini, mushrooms, and carrots. 

Monday: BBQ Pork Pretzel Bombs – We had Cuban sandwiches over the weekend and they were great but now we’ve got lots of pulled pork to eat as leftovers this week. I’m going to stuff a little pork and shredded cheddar cheese inside balls of pretzel dough and then bake them to create delicious stuffed pretzel bombs. I may include some pineapple in a few as well!

Tuesday: Salad & Sandwiches – It’s going to be fairly hot this week so I wanted a meal or two that didn’t require the use of the oven. 

Wednesday: Baked French Toast – It’s been WAY too long since we’ve had Brinner (breakfast for dinner) so when a friend mentioned her dinner plan for the week I knew it needed to make an appearance again. Baked French toast with chunks of cream cheese scattered through it and sprinkled with cinnamon sugar is one of Parker’s favorite meals. 

Thursday: Leftovers 

Friday: Homemade Pizza and Movie Night

Saturday: Slow Cooker Beef & Broccoli – We tend to double or triple this recipe to get lots of leftovers. Or at least double the broccoli and the sauce to save on the cost of the meat. It’s our favorite served over spaghetti or rice noodles but rice is good as well.
