Weekly Menu Plan #25

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Sunday: Double Crunch Honey Garlic Pork Chops – Hooo baby are these delicious! This is one of the first recipes I ever found on Pinterest and it’s been a hit ever since. We love serving these with mashed potatoes and steamed green beans because they go great with the sauce. Instead of buying precut pork chops from the store we buy one of the huge pork loins from Sam’s Club and cut it ourselves into a couple roasts and lots of thin chops. It’s a huge money saver!

Monday: One Pot Enchilada Pasta – After making black beans and enchilada sauce last week for my food prep I knew I needed to make this dish. It’s easy and full of flavor. Plus it goes over well with the kids which makes it a total winner in my book!

Tuesday: Drip Beef Sandwiches – It’s my last container from the freezer ::sad face:: but that only means I need to make a fresh batch again soon! I found some mini steak rolls on mark down at the grocery store last week so I stuck them in the freezer to be ready for these. Yum!

Wednesday: BBQ Chicken Quesadillas – When we stopped at an Aldi while on vacation I loaded up on tortillas. They are only $0.99 for a 10 pack which is an excellent deal! I’ll throw a bunch of chicken breasts in the slow cooker with BBQ sauce (Sweet Baby Ray’s is our favorite) and then fill the tortillas with cheddar cheese, BBQ chicken, and pineapple (for a couple of us). Served with a side of salad and french fries. Yum!

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night

Saturday: Bacon Cheeseburger Tater Tot Casserole – All the cheesy bacon goodness of bacon cheeseburger mixed with tots? Amazing! This will actually be a new recipe for us to try but when I read it to Micah we both agreed it needed to get made. I’m excited to try it!
