Weekly Menu Plan #27

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

Sunday: Taco Pizza – After mentioning taco pizza in my food prep post last week I knew i needed to add it to the menu ASAP! We use refried beans for the “sauce” along with taco meat and black beans before adding plenty of cheese. Once it’s out of the oven I’ll top it with sour cream, avocado slices, lettuce, and salsa or hot sauce. Drooooooool. 

Monday: Waffles of Insane Greatness – This is a favorite around here but I haven’t made them for quite some time. I’m trying to fit some of the kids’ favorites in this week since the big two are heading back to school. 

Tuesday: Brown Sugar Ham Grilled Cheese – Do you remember me posting about these little ham rolls a few times? Well one week I wanted them but I didn’t have the energy to make rolls from scratch and I didn’t have any left in the freezer so I decided to make grilled cheese with ingredients instead! I spread the brown sugar mustard glaze on the inside of the bread, added cheese, then meat, then more cheese and the other slice of bread with more glaze. Once the outside was buttered I grilled it and all the flavors oozed together in beautiful harmony. We all agreed these were amazing and I’m so stoked to eat them again. 

Wednesday: Slow Cooker Pork Lo Mein – It’s a new recipe but it sounds fabulous! And letting it cook all day in the slow cooker means less work for me! Our church has a community garden and every Sunday there is a table full of tons of veggies, free for the taking. It’s amazing! I’m hoping to get a wide variety to throw in with this. 

Thursday: Leftovers

Saturday: Thai Peanut Chicken Wraps – Another new recipe! Our whole crew seems to really love Thai peanut sauce so I’m hoping they are on board with these wraps. I may offer the kids plain chicken tenders with the peanut dipping sauce and skip the wraps for them but who knows, they surprise me sometimes!
