I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.
Sunday: Chili – It may not officially be fall or even fall weather but after we went apple picking yesterday I’ve got fall on the brain! Plus it’s Micah’s birthday weekend and this is one of his favorite meals. I made chili beans from scratch to use which makes it extra yummy!
Monday: Sushi – It’s Micah’s birthday! We already placed our sushi platter order and changed it up a little since we just ordered last week for my birthday. But the kids ate WAY more than we anticipated so we made sure to get plenty that they can eat. I think Anders ate 7 pieces!
Tuesday: Mexican Pasta – I’m taking some of the leftover chili and adding in black beans and corn plus some other spices. It gets served over garden rotini pasta with cheese, sour cream, and avocado on top. This was a staple in Parker’s early years but we haven’t made it recently. It’s delicious!
Wednesday: Potato Cheese Soup – I told you, fall on the brain! I’ve got some ham in the freezer along with ham drippings from the last time we cooked one so I’m going to dice it up and toss it in the soup. It adds a wonderful smokey flavor.

Saturday: Cheesesteak Egg Rolls – Okay, this can seem like an overwhelming recipe because there are SO many ingredients and steps but the flavor is worth it! Of course we change things a little when we make it. We don’t use real red wine but simple cooking wine and we also use whatever roast we have on hand because brisket is SPENDY. But even with these cost saving measures it’s still a phenomenal meal. Micah has been requesting these for about a year since we made them last so I knew I had to fit them in again when it worked for our schedule.
