Weekly Menu Plan #47

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Tater Tot Chicken – I’ve been trying to find more super easy meals for Sundays so we aren’t spending a whole bunch of time in the kitchen cooking rather than enjoying the family time after church. This is a super simple but very delicious dish and pairs easily with steamed veggies or a quick salad. 

Monday: Burgers – We’ve had burgers a lot lately because we got a great deal on these burgers from Sam’s Club. It’s actually a pretty good price for beef and all the work is done for me! When we bought them they were on instant savings for $5 off so it was an even better deal! I’ll whip up some pretzel buns and french fries on the side. 

Tuesday: Bean & Cheese Taquitos – These are one of our favorite frugal meals. I made a big batch of refried beans a few weeks ago and froze them in my favorite freezer containers. The beans get spread on a small tortilla, sprinkled with cheese, rolled up and baked until crispy. The kids like dipping them in sour cream but I prefer salsa. 

Wednesday: Drip Beef Sandwiches – These might be one of my favorite sandwiches ever. 

Thursday: Leftovers

Saturday: Meatball Subs – This is going to be a new one and it could definitely be hit or miss. I made some freezer meatballs just before Christmas. I used a few for Saucy Asian Meatballs on NYE but I’ve still got quite a few in the freezer. I love meatball subs but I’m not sure how the family will feel about them. I’m using our homemade pizza sauce instead of regular red sauce because it’s something they are used to eating. I guess we will find out how it goes later!
