Weekly Menu Plan #49

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Stroganoff – Yet another easy meal that doesn’t require much work from us on a day of rest… especially because its already made in the freezer! Last time we made stroganoff we split it into a batch to eat and a batch to freeze. This is my favorite way to get our freezer stocked!

Monday: Chicken Pizza Bar – The kids have been submitting requests for buffalo chicken pizza, bbq chicken pizza, and Thai chicken pizza so I figured I’d make one of each (maybe more than that, we will see) and everyone can mix and match what they want. I like to keep cooked shredded chicken in the freezer to make meals like this a breeze. 

Tuesday: Taco Lasagna – This is another meal that I used to make all the time when the older boys were little but forgot about as they grew. It popped up in my Facebook memories and I immediately added it to the menu. Layers of tortillas, spicy sauce, corn, beans, and cheese gets baked then topped with sour cream and salsa. I especially love that I can make it meatless and no one complains. And now I’m drooling… 

Wednesday: Bacon Cheeseburger Tater Tot Casserole – Since tater tots are an Instant Savings item at Sam’s Club through the end of the month we’ve stocked up! And what’s not to love about the flavors of bacon cheeseburgers paired with tater tots? 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Birthday Party – It’s our youngest nephew’s birthday/birthday party today so I’m not sure what the plan will be!
