I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: Brats – I found a party pack of brats marked down at Walmart this week (I love finding marked down meat that I can either cook right away or put in the freezer for later) so brats it is! I might put together some potato salad on the side. Picnic food in January, yay!
Monday: Homemade Crunchwraps – I remember when Taco Bell first introduced Crunchwraps and I ate them as often as I could. I was a typical college student. Homemade ones are simple and I love being able to control exactly what goes in them.
Tuesday: Pizza Bubble Bread – Bubble Bread, made with refrigerator biscuits, was a home-ec project in 7th grade for me. I’ve since moved to using homemade pizza dough and the oven instead of the microwave but it’s still super delicious and incredibly easy. Served with a salad it’s a hit for dinner!
Wednesday: Lo Mein – I can’t believe so many weeks have gone by since I’ve made stir fry of some type! I mean, three or four weeks? My goodness. But seriously, we love saucy noodles with some simple veggies added in for crunch.
Thursday: Leftovers
Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.
Saturday: Oven Baked Club Sandwiches – I’ve got some great sub rolls in the freezer just waiting to get used for these! I’m going to load up the rolls with deli meat and cheese then bake. I’ll also make sure we have an assortment of toppings like lettuce, tomatoes, and peppers to top with once they come out. So good.
