Weekly Menu Plan #51

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.


Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Sloppy Joes – We had a stash of this in the freezer so I’m going to throw it in the crock pot in the morning and it will be ready when we get home from church. Anything to make that rush easier is fabulous in my book!

Monday: Buffalo Chicken Grilled Cheese – Cook a couple chicken breasts in the crock pot with hot sauce and ranch until it can be shredded easily with forks. Place a few tablespoons worth of chicken along with cheese in between two pieces of bread to make a fabulous grilled cheese sandwich. Yum!

Tuesday: Saucy Asian Meatballs – I made these as an appetizer for New Year’s Eve but they will make a great meal served with rice and a steamed broccoli as well. I made meatballs for the freezer last weekend plus they can cook in the slow cooker all day which means a super easy dinner!

Wednesday: Enchiladas – I haven’t decided what style I’m going to do yet. I usually make black bean and rice enchiladas but the kids have been on a “no bean” kick making several of our meals difficult. I may do chicken or possibly refried beans since they don’t have an issue with the “squishy beans.” Ah, children. 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Salad Bar – All the fixings and everyone can create a salad they love. This isn’t usually the biggest hit with some of the kids but those kids usually turn it into a bit of a snacky night opting for the fixings without the lettuce. They fill up on cheese, hard cooked eggs, and diced veggies. Is that really such a bad thing?
