I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: Chili – Last week our church hosted a chili lunch for anyone needing help with their tech devices. We didn’t need to stay but Micah immediately asked when we were having chili again. On the menu it went! The fact that it cooks in a slow cooker so it will be ready when we get home from church is the sour cream on the chili!
Monday: Baked Potato Bar – Potatoes are on sale for an amazing price this week and I snatched them up for this. Topping choices will include chili (from Sunday), cheese, bacon bits, sour cream, broccoli, and over easy eggs. Yummy!
Tuesday: Out to Eat – We are surprising the kids with a night out on the town. Dinner at one of their favorite restaurants (thanks to a gift card we received for Christmas) and an early showing of The LEGO Batman Movie. Shhhhh, don’t tell them!
Wednesday: Thai Chicken Pizza – It’s Mercedes Birthday!! How is our little lady four years old?? She requested “peanut butter pizza” and I was happy to put it on the menu. We will also be enjoying a skillet cookie for her birthday dessert.
Thursday: Leftovers
Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.
Saturday: Burgers – It’s birthday weekend #1 with my side of the family visiting. Mercedes requested cheeseburgers and we still have the big box from Sam’s Club to make this extra easy.
