Can I take a moment and acknowledge that I DIDN’T acknowledge last week marking ONE YEAR of menu plans and being around? Holy buckets. A full year of blogging under my belt. I think I may need to write a bit more on this but a huge thank you to everyone that has supported me on this journey so far. Your encouragement means more than you will ever know!
I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: Potato Cheese Soup – It was on our menu recently, I know, but we got that great deal on potatoes last week (two weeks ago?) and they need to get used up. And we like cheese. Nom, nom, nom.
Monday: Taco Pancakes – We switched things up on Friday night with family in town for Mercedes birthday. Instead of our usual pizza night we had a taco bar so I’m re-purposing the leftovers for this amazing meal. I might be looking more forward to the pancakes than I did for the tacos!
Tuesday: BBQ Chicken Sandwiches – The weather has taken a turn towards spring and it has me craving picnic foods! I love doing BBQ shredded sandwiches using various types of meat because it’s so easy! Meat + BBQ sauce + slow cooker = dinner ready and waiting.
Wednesday: Pretzel Dogs – I honestly don’t remember the last time we had these which means it’s been WAY TOO LONG. Lil’ Smokies wrapped in delicious homemade pretzel dough and baked until golden brown. It’s pretty much perfection.
Thursday: Leftovers
Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.
Saturday: Teriyaki Chicken Casserole & Potstickers – This casserole comes together quickly when everything is prepped ahead of time. And homemade potstickers? They take a bit of hands on prep work that gets slightly tedious at the time but the payoff of loads of pot stickers that can be frozen for future use makes it completely worth the effort.
