We’ve got a few things happening this week and I need to spend the grocery budget stocking up on various items that are running low so most of our meals this week rely on shopping the pantry and freezer.
I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: Chicken Parmesean Pasta – I’ve got lots of pasta in the pantry so I’m making use of it this week! This is a slow cooker recipe that can cook while we are at church. I’ll have noodles ready in the fridge before we leave to make serving incredibly easy.
Monday: Lo Mein – It doesn’t get much easier than lo mein. A few quick ingredients and random veggies (it’s a great way to use up some stragglers) and dinner is on the table.
Tuesday: Grilled Cheese – We’ve got conferences tonight so quick and easy is the name of the game!
Wednesday: Salisbury Steak Meatballs – It’s been AGES since we’ve eaten this! I’m going to be using my freezer meatballs instead of the meatballs in this recipe to make things go faster but I’m excited to eat it again.
Thursday: Leftovers
Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.
Saturday: Brats & Baked Beans – Our spring weather is gone again but we can pretend by making this, right? We can imagine being out in the sunshine. I can almost feel the warmth… almost.
