Menu Plan #58

Plans changed a little from last week’s menu. We are getting together with friends tonight for dinner so Shepherd’s Pie gets pushed to Sunday. No big deal! For the friend dinner I’m making our favorite Spicy Shredded Pork and we split up all the fixings between our families to create a big taco bar. I’m really excited!

I let the kids help plan the menu this week so hopefully there are less complaints when it comes time to eat. 

 

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Shepherd’s Pie – Like I said above, this got bumped from Saturday to Sunday because of a gathering of friends. I’m going to attempt to assemble it in the crock pot so it’s ready when we get home from church. Hopefully it works well!

Monday: Been & Cheese Enchiladas – These were a HUGE hit with the kids the last time I made them. We almost ran out they loved them so much. I think the key was the sour cream/enchilada sauce mixture that helped tame the spice for them. 

Tuesday: Pizza Grilled Cheese – We can’t seem to get enough pizza around these parts and will take it just about any way we can. Stack the toppings in between slices of bread with some mozzarella cheese then grill. Serve with a side of pizza sauce or marinara for dipping. Yum!

Wednesday: Chicken & Broccoli – I love this meal because it cooks in the crock pot with very little help from me. Swap the beef for chicken (and the beef consumme for chicken broth) to create this meal that is a little friendlier to the budget than the original. We serve ours over noodles but rice works as well. 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Burgers – Is it too much to ask for the weather to perk up so we could actually grill? It probably is but I’m going to plan for burgers anyway. I’m really hoping for a nice weekend but there’s always cast iron if it’s gross out.
