Weekly Menu Plan #55

I’m juggling posts around a bit to find a better schedule. Menu plans will now be posted on Saturday but will still contain meals for Sunday through Saturday. The peek at the best moments of our week will now get bumped to Sunday. I just wanted to give y’all a heads up so you know when to come looking for new posts! 

This week are keeping it super easy. Even easier than last week! I’m busy behind the scenes around this place so while I do love cooking and making awesome meals sometimes I also need to lighten my to-do list and making easy but delicious meals is one of the best ways to do that. 

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Sticky Chicken Wraps – I made a big batch of the sticky sauce for these a couple weeks ago which means the only thing we need to do is cut up some veggies for inside (we like adding avocado and cucumber along with the lettuce) and cook up chicken tenders. So simple!

Monday: Salad Bar – It doesn’t get much more simple than a homemade salad bar. I can even cut up the lettuce in the morning and it will keep great in our salad spinner until dinner time. Lots of other toppings plus homemade croutons will be available as well. 

Tuesday: Pizzadillas – Micah and I used to make these when we were still dating… 12 years ago. When Pinterest became a thing and I started seeing food bloggers post them it made me giggle! What’s not to love about pizza toppings squished between tortillas and dunked in pizza sauce?

Wednesday: Brown Sugar Grilled Cheese – The inspiration for these sandwiches comes from these little sliders. Instead of using small dinner rolls I use regular sandwich bread then cook them as a grilled cheese sandwich. Sometimes I even serve a little extra sauce on the side because it’s incredibly addicting!

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Bacon Cheeseburger Bombs – These sound like a fun and simple meal for a Saturday night! And any excuse to pair french fries with a meal is great in my book 😉
