I’ve got some food on the menu this week that is incredibly easy to customize based on your preferred tastes and dietary restrictions. Burrito bowls are one of the most versatile options – your choice of proteins, veggies, and toppings! Chili can be customized based on how chunky (and what makes up the chunks) you choose to make it as well as the spice level. It can also include meat or be vegetarian. I love having choices when it comes to my food!
I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: Burrito Bowls – All the deliciousness of a burrito without the shell. I’m going to have a wide variety of toppings (because I love choices) and everyone can customize their own bowl.
Monday: Chicken & Dumplings – Sometimes I think I really should have been born a little further south. Saying “y’all” comes naturally and I adore southern comfort food like fried chicken, and chicken and dumplings. It’s probably best I don’t live down there 😉
Tuesday: Chili & fixins – The last time we made chili we froze half the batch for a future use and that time has come! I love meals I can throw in the slow cooker and serve without a fuss.
Wednesday: Waffles of Insane Greatness – When I was cleaning out a cupboard a couple weeks ago for the clutter buster challenge I saw my waffle plates and realized it’s been far too long since we’ve had waffles, especially for dinner!
Thursday: Leftovers
Friday: Date Night – Wooo! Our chuch youth group is hosting a babysitting night to raise money for their summer missions trip. We missed the last opportunity so we are ABSOLUTELY taking advantage of this round. Sushi, here we come!
Saturday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here. We moved movie night because of date night but we can’t skip it entirely!
