We kick off this week with a birthday and then life gets to settle down for a while with our normal routine. After the crazy and terrible illness that we were dealing with two weeks ago and then spring break I am ready for a completely normal, slow, run of the mill week. And cake. Always cake.
I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.
Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.
Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.
Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:
Sunday: BBQ Chicken Pizza – Happy Birthday Jamison! Our second born turns 7 today and he chose BBQ chicken pizza with my homemade crust for his birthday meal. For his birthday dessert we are having vanilla cupcakes with peanut butter frosting. He also asked for strawberries, mini marshmallows, and baking chips to decorate. Sounds good, kid!
Monday: Enchilada Pasta – Meatless Monday with one of my favorite dishes. I’ll be filling it up with chili beans, black beans, and corn to replace the taco meat in the original recipe.
Tuesday: Bang Bang Chicken & Fried Rice – This will be a new recipe for our family and I can already sense a little backlash with the “spicy” side of this dish. I’ll probably reduce the amount of chili garlic sauce just to be on the safe side. At least I know the kids enjoy this fried rice, especially picking out the peas & carrots to eat first 😉
Wednesday: Chicken Alfredo Bundles – Sam’s Club has crescent rolls on sale through March 26th so I grabbed a box to make this family favorite. I’m deviating from the recipe slightly and pouring the sauce over the bundles after they are baked. I think this will help them get a little crispier!
Thursday: Leftovers
Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.
Saturday: Shepherd’s Pie – A little late to the game since St. Patrick’s day has passed but this is delicious year round!
