Weekly Menu Plan #59

Spring has officially shown up! Our grill is out and we are eating fun meals. The kids are outside nearly every day on their bikes and coloring with chalk. I’ve got a few super fast meals on the menu this week as well as a couple that I can prep ahead and cook when it’s time. It might even get warm enough this week for picnics… as long as the wind isn’t terribly crazy. Yay for spring!

I love menu planning and seeing other’s dinner plans! I’m weird like that 😉 As I’ve shared before, being in the kitchen is my happy place so I love finding meals that are new but I also never forget our favorites! These will link to the author’s original recipe unless it’s my own recipe/creation that I don’t have a link for… yet.

I don’t make specific plans for breakfast and lunch but these are the basics I rotate between while throwing in a few other things for special days or weeks when I have the right ingredients.

Breakfasts: Pancakes, Coffee Cake, Egg Sandwiches, Sausage Balls, Eggs (various ways), English Muffins, Banana Bread, Biscuits and Gravy, and various types of muffins.

Lunches: Leftovers, PB&J, Meat and Cheese Wraps, Cheese Quesadillas, and Mac ‘n’ Cheese.

Dinners, however, are always planned for since they tend to take the most ingredients and prep time. Here’s what’s on our menu this week:

Sunday: Brown Sugar & Ham Sandwiches – I know, these were just on our menu a few weeks ago. Jamison adores them and it’s his most frequent request. Luckily we all really like them too so we are fine eating them again!

Monday: Mini Taco Pizzas – We will be making personal taco pizzas using fajita sized tortillas. Sauce can be refried beans or enchilada sauce and toppings include taco meat, black beans, corn, cheese, lettuce, sour cream, guac, salsa, and hot sauce. 

Tuesday: Sticky Shrimp Wraps – I’ve got a box of breaded shrimp left from a recent family weekend begging to be covered in Winger’s Sticky Finger sauce. Swap out the chicken fingers for crispy shrimp in this recipe for a delicious and easy weeknight meal. We’ll be adding some avocado slices as well because – YUM!

Wednesday: Baked Stuffed French Toast – This is one of the few items I don’t make during the week for breakfast because of the time it takes to cook. This makes it great for weekends or brinner during the week! 

Thursday: Leftovers

Friday: Homemade Pizza and Movie Night – you can find my pizza crust recipe here.

Saturday: Hot Dogs – We are grilling! We really enjoy these all beef hot dogs from Sam’s Club. I’ll make up some great sides as well so we can embrace the beautiful weather we are supposed to have. Right now it says nearly 70* for next Saturday. Bring it on!
