Every week I like to take a moment to showcase the moments that brought me the most joy. Sometimes they are awesome activities and other times it’s a sweet moment between the kids. There are always moments that can fill us with joy if we choose to see them with a thankful heart.
I love being able to look back at a week with happy thoughts. Was everything perfect? Of course not! But we enjoyed our time together, we accomplished some things, the kids mostly got along, and overall it was just GOOD. This is why I continue to do these posts. To prove that amidst all the crazy that comes with everyday life that there is so much good shining through.
1. Creative builders
These little guys are starting to act so much more like big guys. They are venturing off to play on their own and use their imaginations to build all sorts of creations with LEGO and duplo. Anders sticks to animals and airplanes while Cade keeps building boys. He likes making them super tall!
2. Instant Pot Lo Mein
We tried a new recipe this week – Instant Pot Lo Mein! I used frozen veggies instead of fresh veggies and doubled it because there are seven of us. I also had to add three extra cups of water because we’ve got the 8qt Instant Pot and it needs more water than the 6qt in order to come to pressure. The frozen veggies didn’t work as well as fresh would have but it was still good. All the kids ate the noodles but only a few were willing to eat their whole bowl – but that’s par for the course. They did say they really liked the noodles and I really liked throwing everything together in the pot and not having to have multiple things going on the stove at once!
3. Sour cream mustache
What can I say to add to the adorableness of this picture? He turned around and I had to snap a picture. I was in the middle of dealing with a difficult situation with another child so this was incredibly welcome. Man, I love these kids, even when they drive me bonkers.
4. Mommy son date
I finished my dates this round with Jamison. He chose burgers and once I found a coupon we were both able to get a burger, fries, and drinks for about $10 all together. We also hit up the library to load up on new books and Sam’s Club to get the shrimp for Mercedes’ birthday dinner this week. We chatted about his birthday coming up in March, Marvel characters, and things at school. He’s a quiet but incredibly sweet boy. Once March hits we move on to Daddy-kid dates!
5. Stack of crepes
Crepes are a BIG hit in our house but because they tend to take quite a bit of time I don’t make them super often. This is our favorite recipe and I doubled it for our family. After breakfast where most of the kids each ate four (Micah and I each had two) there were enough for the kids to have two each for dinner and that was about it. We made a cream cheese filling and loaded them up with strawberries and raspberries. So delicious!
